The wine underwent partially 30% Malolactic fermentation to add a further layer of interest and also to reduce the high level of natural acidity.
Maturation: in 225 Litres new French oak barriques for a period of 3 months. The wine was then blended, stabilised, fined and clarified in preparation for bottling.
