Hand-harvested grapes, crushed and de-stemmed, then pressed and the free run was transferred into the temperature-controlled tank, the juice was inoculated with a suitable yeast culture and the wine was kept on its yeast lees prior to blending, stabilized, fined and clarified in preparation for bottling.
