Winemaking

Grapes were crushed and de-stemmed into open fermenting vats. Juice was inoculated with suitable yeast culture, the cap was hand plunged 3 times daily, with total maceration time of 2 days until the juice has extracted enough colour. The fermented wine was then pressed and transferred into refrigerated tanks to stop the fermentation and kept at minus 4 Degrees Celsius to preserve fruit flavours and natural sweetness.

Maturation

The wine was kept under refrigeration for 90 days, the wine was then stabilized, fined and clarified in preparation for bottling.
